For recording and cutting I prefer Power Sound Editor Free for its interface and extreme ease of use, and Audacity for everything else. Exporting to various big formats is quite a handy feature.

Another valuable discovery: If you attempt to load Note.TXT in Audacity, the resulting sound will not be a thing of great beauty.
